Halloween Treat - Oreo Spider Cookies

My 4-year-old was assigned to bring the treat for her school today, and she was not about to let me just bring a bag of crackers.  After all it is Halloween:)  She started to draw various pictures of the different kinds of treats she had in mind like girl and boy pumpkin cookies complete with hair, rice crispy treat pumpkins and other spooky treats.

We decided on a spider theme.  These cookies are not too messy, not too much treat and they are completely adorable.  My daughter wanted to be involved in the entire process so after she had drawn her design we headed to the store to pick out the right Oreos, licorice and eyes for the recipe.

I am a huge fan of mint and chocolate, and since we couldn't find orange filled oreos we went with the green.  We found some green apple flavored licorice twists that could be pulled apart and used for legs.  We decided on mini M&Ms for the eyes.

To make the spiders we pulled apart the licorice into long single strands.  We then cut them to the length that we wanted for the legs.  Then we separated the oreos and inserted eight legs into each spider.  The cookie tops weren't sticking back on well so I whipped up a batch of my go to Mint Buttercream Frosting and spread a little bit of that between the layers so the top cookie would stick on the legs.

To attach the eyes we piped two dots of the frosting onto each top cookie and my 4-year-old took over the job of attaching the eyes.

They turned out so cute, and oddly enough the flavors are fun together.  She can't wait to attend school today and share her spider cookies with her friends.

Mint Buttercream Frosting Recipe
1/2 Cup Butter Softened
2 Tbsp Milk
3/4 tsp Mint Extract
2 1/2 - 3 Cups Powdered Sugar
Green Food Coloring

Cream the butter with 2 cups of powdered sugar.  Slowly add the milk and mint extract.  Once combined continue to add powdered sugar until frosting is light and fluffy.  Add food coloring a drop at a time until desired mint color.  I typically use 2-3 drops of green food coloring for this recipe.
